Happy St. Patrick’s Day! In honor of the holiday and my grandmother’s side of the family, I got into the baking spirit all afternoon.
Had to go traditional with Irish Soda bread.
There is something so meditative about baking. It’s just you and the ingredients, measuring, sifting, and working with your hands. And then you have a delicious and edible end product! Everybody wins.
Look at this. Almond flour, rolled oats, flax, chocolate chips, vanilla extract, and molasses.
To become delicious balls (haha) that taste just like Reese’s peanut butter cups. I made some for myself and some for Linda. They are so so so good.
I also made Katie’s Chocolate Bar PIe. One of my favorite raw desserts ever.
Then my mom whipped up some corned beef and cabbage and some random Asian Slaw and we had a little feast. I love celebrating holidays with food!
Workout
After getting outside for a 15 minute walk with Holly, I busted out Julie’s Jumping Jacks Circuit Workout. I felt so energized and worked hard for those minutes on. And then I was sweaty. And then I ate some corned beef and cabbage.
Now I’m watching Young Adult and am about to get some chocolate pie. Definitely a great night in.
Happy St. Patty’s Day!
I love Irish soda bread. I need to be sure to eat some next Saint Patrick’s Day!
You should make it! It is so easy and only has 5 ingredients. The hardest part was kneading the dough. There was flour EVERYWHERE.
